Ingredients
2 - 3 large potatoes,
peeled and cut into pieces
1 large sweet potato,
peeled and cut into pieces
1 large parsnip, peeled /
cut into pieces
2 cloves of garlic,
chopped
Handful of parsley
Large knob of butter
Handful of grated cheddar
– about 30 gms / 1 oz, more if you like!
Method
1. Put the potatoes, sweet
potato and parsnip in a large saucepan, cover with water, add a tsp. salt, bring
to the boil, and simmer for 10 – 15 minutes until just cooked.
2. Drain [reserve the
water if you like for gravy / stock].
3. Mash with a potato
masher, add the butter, garlic and parsley, and mix well together.
4. Pile onto a large pyrex
plate. Sprinkle over the cheddar cheese.
5. Put into the oven,
around 170C, for about 20 minutes, until the top is browned.
Lovely with pork / lamb
chops, chicken / beef casseroles, etc.
Tip:
Try
with celeriac or swede as well, instead of the parsnip.
