DAMSON JAM

 

5 lbs. damsons

6 lbs. sugar

1.5 pints water

 

Wash damsons.

Put in large saucepan with water.

Bring to the boil.

Simmer for 30 minutes until fruit is really soft.

Add sugar, stir until dissolved.

Boil rapidly until setting point is reached [test].

 

Put into sterilised jam jars.

Cool, then put lids on.

 

Makes 10 lbs+
