Makes about 30 Deliciously crunchy
delectable home-made biscuits, so more-ish that they disappear very
quickly! Preparation: 10 minutes Cooking: 8 - 10 minutes
Ingredients 4oz soft margarine 2oz Demerara sugar 2 tablespoons golden syrup 8oz self-raising flour Pinch of salt 3 level teaspoons ground
ginger Half teaspoon bicarbonate
of soda Method 1. Heat oven to 180
degrees C. 2. Place the flour, salt
and ginger in a mixing bowl and mix together. 3. Put the margarine,
sugar and syrup in a small saucepan, and bring to the boil, until
margarine has melted. Add the bicarbonate of soda and stir until
it froths. 4. Pour it onto the flour,
and stir until you have a medium consistency. [If mixture appears to
be too greasy / soft, add a little more flour to it.] 5. Grease 2 baking sheets,
and place walnut-sized knobs of mixture onto the trays, patting down
slightly, and leaving a little space in between each. 6. Bake at 180 degrees C
for 8 - 10 minutes. [If mixture does spread, it is easy to cut between the lines with a spatula as they come out of the oven.] Remove onto a cooling rack, then put into a biscuit tin when cool.
