Preparation: 10 minutes
Cooking: 8 - 10 minutes
4oz soft margarine
2oz Demerara sugar
2 tablespoons golden syrup
8oz self-raising flour
Pinch of salt
3 level teaspoons ground
Half teaspoon bicarbonate
1. Heat oven to 180
2. Place the flour, salt
and ginger in a mixing bowl and mix together.
3. Put the margarine,
sugar and syrup in a small saucepan, and bring to the boil, until
margarine has melted. Add the bicarbonate of soda and stir until
4. Pour it onto the flour,
and stir until you have a medium consistency. [If mixture appears to
be too greasy / soft, add a little more flour to it.]
5. Grease 2 baking sheets,
and place walnut-sized knobs of mixture onto the trays, patting down
slightly, and leaving a little space in between each.
6. Bake at 180 degrees C
for 8 - 10 minutes.
[If mixture does spread, it is easy to cut between the lines with a spatula as they come out of the oven.]
Remove onto a cooling rack, then put into a biscuit tin when cool.
