Banana
Cake

oz. Soft margarine
8
oz. soft brown sugar
1
large egg
2
large or 3 medium mashed bananas [over-ripe is fine]
8
oz. Self-raising flour
Half
teaspoon salt
Generous
pinch of mixed spice,
nutmeg
and cinnamon
Handful
of raisins / sultanas
2
tablespoons milk
Cream the
butter and sugar together.
Add the egg and
mashed bananas.
Gradually add
the flour and spices.
Add the raisins
/ sultanas
Add 2
tablespoons milk.
Mix thoroughly,
and put into prepared greased/floured cake tin.
Bake at 165 /
170 degrees F for 1 hour and fifteen minutes.
Check after an
hour – your oven might be different!
Test to see if
it’s done.
